Description
Castle Malting® Château Acid Malt is a barley malt acidulated with lactobacilli, designed to reduce mash pH when brewing with water high in bicarbonates. By optimising pH levels, it boosts the activity of hydrolytic enzymes, leading to improved mash efficiency. Château Acid Malt also supports a more vigorous fermentation. Additionally, Acid Malt contributes to a balanced flavour profile and helps maintain good head stability in the finished beer.
Use: Any ale or lager, wheat beers, light beers for optimising the pH level.
