Description
Phoenix hops are a versatile UK-grown hop known for delivering both reliable bitterness and distinctive late-hop character. Originally bred at Wye College and introduced commercially in the 1990s, they were initially cultivated for a single brewery before becoming more widely available.
Brewers often use Phoenix as a dual-purpose hop thanks to its solid alpha acid range and rich oil content. It contributes a smooth, rounded bitterness alongside layered flavour notes of dark chocolate, treacle-like sweetness, soft spice, pine and subtle floral tones.
Phoenix performs well in a range of beer styles, particularly darker ales, bitters, porters and speciality beers where its earthy sweetness and balanced bitterness can stand out. It also stores well and is valued for its hardy growing characteristics and resistance to several common hop diseases.
