Description
Castle Malting® Château Vienna is a Belgian Vienna-style base malt, lightly kilned at 85–90°C with a shorter curing period. It delivers a richer malt and grain flavour than Château Pilsen malt, along with delicate caramel and toffee notes. Kilned at slightly higher temperatures than Château Pilsen malt, Château Vienna imparts a deeper golden hue to the beer while enhancing its body and fullness. Although its enzyme activity is somewhat lower due to the higher kilning temperature, it still possesses sufficient enzymatic power to be used alongside a high proportion of specialty malts.
Use: All beer styles, Vienna lager. Also to enhance colour and aroma of light beers.
