Description
Castle Malting® Château Roasted Barley is raw roasted barley, torrefied at temperatures up to 230°C. The degree of darkness depends on the roasting duration. This intensely roasted barley imparts bold burnt, grainy, and coffee-like flavours to beer. While it shares some traits with Château Black Malt, it offers greater complexity. Château Roasted Barley contains a small amount of starch that can convert during mashing, influencing the gravity of the beer and also adding a touch of sweetness to the finished beer. Compared with Château Chocolat and Château Black malts, roasted barley creates the palest head, while contributing a deep red mahogany colour and an intense roasted character. It adds a pleasant dryness to Porters and Stouts.
Use: Stouts, Porters, Nut Brown Ales, and other dark beer styles.
Rate: 2-4% in Brown ales, or 3- 10% in Porters and Stouts.
