Description
Developed from Simcoe® and released by the Hop Breeding Company in 2012, Mosaic® is a US hop variety renowned for its enticing balance of floral, tropical, fruity, and earthy flavours. With its high alpha acid content, Mosaic® functions effectively as a dual-purpose hop, but its true appeal lies in its smooth character and distinctive aroma, making it particularly well suited for pale ales and IPAs.
Like Citra® and Cascade, Mosaic® is celebrated for its complex and fruit-forward aroma profile—a quality that inspired its name. Its dominant notes are tropical, with pineapple, mango, and passion fruit leading the way, which has made it a favourite among IPA brewers. Additional fruity nuances include tangerine, lime, gooseberries, and cassis.
Beneath the fruitiness lie floral, grassy, and herbal undertones. Mosaic® also offers aromas of blossom and rose, alongside hints of pine. There are also subtle spicy, savoury, and sweet notes reminiscent of alliums, adding further depth to its intricate profile.
