This results in very low attenuation.<\/p>\n<p>LalBrew\u00ae LoNa\u2122 is the first maltose-negative Saccharomyces cerevisiae strain specifically selected for beer fermentations. Because it is a Saccharomyces cerevisiae strain, LalBrew\u00ae LoNa\u2122 performs a lot like an ale yeast, producing a clean and neutral aroma profile, with no phenolic flavours, and also significantly reduces aldehydes which are the cause of &#8216;worty&#8217; flavours in beer.<\/p>\n<p>Patented technology from the University of California Davis (USA) ensures that this strain will not produce sulphurous off-flavours, which allows the malt and hop flavours of your beer to shine through.<\/p>\n<p><strong>Pasteurization is required when brewing with LalBrew\u00ae LoNa\u2122 to avoid fermentation after packaging and to ensure beer stability.<\/strong><\/p>\n<p><strong>Brewing Properties:<\/strong><br \/>\n<br \/>\n<em>In Lallemand\u2019s Standard Conditions 8\u00b0P Wort at 20\u00b0C (68\u00b0F), LalBrew\u00ae LoNa\u2122 yeast exhibits:<\/em><br \/>\n<br \/>\nVigorous fermentation that can be completed in 3-4 days.<br \/>\n<br \/>\nVery low attenuation of 16-20%.
